What do we mean by our flavor profile of “delicate and dynamic”?
Delicate: Delicate coffees are those whose flavor characteristics are much more deliciously subtle and nuanced than, say, a bold, chocolatey cup. Instead, both the tasting notes and acidity have a pleasant mildness about them. They’re typically well-balanced, with a lighter body. Notes associated with these kinds of coffees are usually floral, citrusy, sweet, or even tea-like.
Dynamic: Dynamic coffees, on the other hand, are usually labeled as such because of their unique and unusual flavors. They are often processed using non-traditional types of fermentation (anaerobic, etc.) that impart complex flavors. There might be an intense fruitiness or a surprisingly flavor like watermelon, stewed strawberries, or rooibos.

"We have a fleet of coffees from Paola this year, and second on the list is this unique Wush Wush black label. Processed to competition-level perfection, this coffee boasts an incredibly high clarity of tea like notes with florals and subtle fruitedness. This is a heartier bean, with a touch more development in the roast needed to bring out the sweetnesses we know are under that floral layer. This is certainly a sipping coffee, intended to be cherished, not chugged."

Morkata is the name of the month here in the shop, we’re loving these 2 new lots we’ve acquired from him and are excited to get to be promoting them. We cupped multiple coffees for this Q4 2025 set of launches for the website and loved how this one cupped. we were getting hints of straight up vanilla in the cup with a lot of movement in the profile as the coffee cooled. Nice sweetness and floral notes, but it didn’t completely lose the smooth nature of a washed coffee in having a mediumish mouthfeel. Overall, this coffee really hits that “washed Ethiopian” nail on the head.
