Mountain Water Process decaf uses pure water from the Pico de Orizaba mountain in Mexico to gently extract caffeine, removing 99.9% of it without chemical solvents. It's one of the cleanest decaffeination methods available, and the coffees that come through it taste like actual good coffee rather than a faded photocopy.
Our Chiapas Mountain Water decaf comes from producers in the Chiapas region of Mexico, one of the country's premier growing areas. High altitude, volcanic soil, shade-grown under forest canopy. The base coffee is excellent before decaffeination even enters the picture, which is why it holds up so well after processing.
If you're caffeine-sensitive or just want a great cup in the evening, this is the decaf we reach for ourselves.
Our current offering features Caturra, Typica, and other washed varieties from Chiapas producers. The Mountain Water Process preserves the smooth, balanced character these Mexican coffees are known for.
