El Aguacatal • El Amate • Natural Maragogype from Guatemala

melon - We were impressed with the fruited sweetness that came out in this cup. Loads of deliciously subtle fruited notes that we feel “melon” speaks to accurately. Almost no acidity sits in this cup at all, extremely clean and soft spoken.

milk chocolate - A clean Guatemalan terroir will always bring some cocoa into the fold of the profile and although it was certainly present, the smoothness of the cup was so prominent that we thought tying a cream-related note to the description was necessary.

peach - We wanted to put two very subtle and sweet fruits in our notes to bring a couple ideas together: 1. that this coffee is fruit forward 2. this coffee isn’t acidic, it’s just nice and smooth/sweet. Peach has a traditional delicate stonefruit sweetness with slight jammy notes that we would say describes the profile well.

Don Eli • Anaerobic Catuai from Costa Rica

white chocolate - This coffee is interesting! The profile is very sweet and has a smooth mouthfeel, much like white chocolate.

sangria - The sweet, fruity, and aromatic funkiness of sangria is very descriptive of this cup. The anaerobic fermentation process is what causes this unique alcoholic essence to take place.

snow cone - Not only does this coffee have a lot of sugary and fruited sweetness, but it’s also quite fun! Sno cone encapsulates both of these ideas very well.

sugar crystal - This coffee is incredibly sweet and has a deliciously sugary profile throughout the entire cup.

praline - Praline is a culmination of sugary, salted, and nutty notes that describe the overall woodsy profile we're picking up in the cup.

caramel apple - We did indeed pick up a dash of apple-like tartness that comes hand in hand with the developed sweetness of the cup.
