Removing caffeine tends to strip flavor along with it. The processing methods available today have changed that significantly.
Our decaf coffees use chemical-free methods. Mountain Water Process (MWP) is the primary one we look for. It uses pure water from the Pico de Orizaba mountain in Mexico to gently extract caffeine, removing 99.9% of it without chemical solvents. A decaf that actually tastes like good coffee, not like a faded version of one.
We also carry sugarcane decaf, which uses ethyl acetate derived from sugarcane to remove caffeine. Different process, different result. Sugarcane decaf tends to retain more body and sweetness but removes slightly less caffeine (around 97%).
If you're caffeine-sensitive or just want a great cup in the evening without staying up all night, you shouldn't have to sacrifice quality. Same specialty-grade beans, same careful roasting, just without the caffeine.
Our current sugarcane decaf is from Colombia's Valle Del Cauca region, and we carry a Mountain Water Process decaf from Chiapas, Mexico.
