Grind Levels Explained

Proper coffee extraction is critical for achieving that perfect cup at home. Grind size is one of the few ways to be able to directly affect that extraction rate.

In addition to whole coffee beans, we currently offer 3 different coffee grind levels:

Coarse (Think sugar in the raw, maybe more coarse)
Recommended for

  • Chemex Brewer
  • French Press
  • Cold Brew

Medium (Slightly coarser than table salt)
Recommended for

  • Any flat bottom brewer
  • Kalitta wave
  • Cloth filters

Fine (Slightly finer than table salt)
Recommended for

  • V60 pour overs
  • Typical cone filter coffee pots
  • Aeropress

If you're interested in ground for Espresso, choose fine and mention something in the order comments.

If at all possible, we recommend grinding at home. We prefer Baratza coffee grinders and offer several of their models for sale. Click here to shop for one of their brewers.

In the Cup:

When we first sampled this lot, we were very impressed with how clean it is for this price point. It has a rich and pleasantly bitter chocolate note throughout. It finishes with a crisp note of almonds. As it cools, we noted a sweetness like passionfruit that balances perfectly with the chocolate. Overall this coffee has a strong body and isn't too fruity like many dry process coffees. If you're looking for a place to start your Sagebrush journey, this one is perfect. If you love some of the Brazilian coffees we've had in the past, this one will exceed your expectations. If you just like a good cup of coffee, this one is for you.

Santa Teresa de Mogoton

Producer Silvio Sanchez got into coffee farming through the study of agronomy. His mother also loved coffee and the two of them saved their money, took out a loan, and purchased a well-suited piece of land in the La Union, San Fernando region of the Nueva Segovia department in Nicaragua.

Santa Teresa de Mogoton is a relatively remote farm, accessible by a single road that leads to a handful of other farms as well. The farm is beyond the reach of cell phone service and the deep trenches along the sides of the road from heavy rainfall challenge even well-equipped 4×4 trucks.

Dense pine forests and interplanted pine trees provide shade for coffee, casting dark shadows of the deep green leaves of the coffee trees, giving Santa Teresa de Mogoton a quiet, spectral atmosphere. The farm is expertly organized, a testament to Silvio’s training as an agronomist, and the neat rows of young trees have given several successful harvests. The farm is 10 hectares and cultivates Catimor and Java varieties in addition to the Catuai selected for this lot.
