Grind Levels Explained

Proper coffee extraction is critical for achieving that perfect cup at home. Grind size is one of the few ways to be able to directly affect that extraction rate.

In addition to whole coffee beans, we currently offer 3 different coffee grind levels:

Coarse (Think sugar in the raw, maybe more coarse)
Recommended for

  • Chemex Brewer
  • French Press
  • Cold Brew

Medium (Slightly coarser than table salt)
Recommended for

  • Any flat bottom brewer
  • Kalitta wave
  • Cloth filters

Fine (Slightly finer than table salt)
Recommended for

  • V60 pour overs
  • Typical cone filter coffee pots
  • Aeropress

If you're interested in ground for Espresso, choose fine and mention something in the order comments.

If at all possible, we recommend grinding at home. We prefer Baratza coffee grinders and offer several of their models for sale. Click here to shop for one of their brewers.

In the Cup:

This coffee is your quintessential Guatemalan bean. With that classic “Guate gold” flavor profile that we’ve always looked to keep around in our Sagebrush catalog (except now we’re shifting it into the “brown label” category), this bean boasts a dark chocolate sweetness with the smoothness of heavy cream. Almost like a uniquely spiced ganache, this coffee’s medium body and consistently subtle sweetness makes it a safe yet exciting coffee.

Fénix

In the generations the Martinez family has cultivated coffee in Guatemala, an onslaught of challenges have affected smallholder producers, from a 30 year civil war to devastating natural disasters. Guatemalan farming families are acutely attuned to generations of adversity.

Fénix blend is a statement of hopeful solidarity. When working families in Guatemala gain market access and knowledge, they rise together. This mythological blend is sourced by Onyx's Guatemala City based QC team, in cooperation with vendor partners in Nuevo Oriente and beyond. Sourcing from smallholder producers, cooperatives, and estates we've curated a blend that is chocolate-forward, with a classic Guatemalan profile of orange & lemon, cream, and caramelized brown sugar sweetness.
