Grind Levels Explained

Proper coffee extraction is critical for achieving that perfect cup at home. Grind size is one of the few ways to be able to directly affect that extraction rate.

In addition to whole coffee beans, we currently offer 3 different coffee grind levels:

Coarse (Think sugar in the raw, maybe more coarse)
Recommended for

  • Chemex Brewer
  • French Press
  • Cold Brew

Medium (Slightly coarser than table salt)
Recommended for

  • Any flat bottom brewer
  • Kalitta wave
  • Cloth filters

Fine (Slightly finer than table salt)
Recommended for

  • V60 pour overs
  • Typical cone filter coffee pots
  • Aeropress

If you're interested in ground for Espresso, choose fine and mention something in the order comments.

If at all possible, we recommend grinding at home. We prefer Baratza coffee grinders and offer several of their models for sale. Click here to shop for one of their brewers.

In the Cup:

We were excited to participate in the Guatemala One of a Kind Auction this year and targeted a few coffees. Our idea was to either split a lot with a couple of other roasters or if we got lucky, go for this entire lot. We got lucky! We were able to acquire the entirety of this lot, so you can have exclusive access to it from Sagebrush.

This coffee is a perfect authentic Guatemalan coffee. It is both smooth and chocolatey, but also have hints of blueberries. We the cup cooled, we noted a clean finish like hibiscus. Speaking of which, this is one of the cleanest Guatemalan coffees we've ever offered. Cupping these Diamond Reserve auction lots, we understand what makes an auction coffee and at the price we were able to get this one, it is also very accessible.

El Zapote Y Anexos

El Zapote & Anexos is located in a little region named Agua Dulce, Cuilco, in Huehuetenango, Guatemala. This area, which is very close to the Mexico-Guatemala border, is surrounded by mountainous terrain and blessed with diverse microclimates that have allowed different coffee varieties to grow successfully.

In the late 1950s, El Zapote & Anexos farm was acquired by the Pérez Family. In the beginning, they only had Typica coffee, but in 1960 they started to introduce new varieties such as Red Bourbon and Red Caturra. These would be followed with even more offerings like Yellow Catuaí, Villa Sarchí, Gesha, and Pacamara in the following decades,

As years passed, the farm continued expanding and increasing its coffee production. They combined environmentally friendly farming practices and focused on human collaboration that would benefit both individual people and their communities.

Nowadays, El Zapote & Anexos is run by Wilfrido Pérez, a fourth-generation farmer, and Hernán Pérez, a fifth-generation farmer. Both men are members of the Pérez Family. They are leaders in the production and marketing of specialty coffee.
