The cup profile is bright, clean, and citrus-forward with a lighter body that makes it a natural fit for pour-over brewing.\u003c\/p\u003e\u003cp\u003eCaturra thrives at high altitudes. The denser the bean (which comes from slower growth at elevation), the more pronounced the acidity and sweetness become. At its best, Caturra has a snappy brightness and a clarity that lets you taste exactly what the producer and the terroir put into it.\u003c\/p\u003e\u003cp\u003eIt's one of the most planted varieties in specialty coffee for a reason. The texture of pear is more of what we’re thinking of as we take note; the smooth and sweet nature of pear ties in this note very directly.\u003c\/p\u003e\n\u003chr\u003e\n\u003ch2\u003eColombia EA Decaf Process\u003c\/h2\u003e\n\u003chr\u003e\n\u003cp\u003eEthyl acetate is an occurring ester (present in bananas and also as a by-product of fermented sugars) that is used as a solvent to bond with and remove caffeine from green coffee. First, the coffee is sorted and steamed for 30 minutes under low pressure in order to open the coffee seeds’ pores and prepare them for decaffeination. The coffee is placed in a solution of both water and ethyl acetate, where the E.A. will begin to bond with the salts of chlorogenic acids inside the seeds. The tank will be drained and re-filled over the course of eight hours until caffeine is no longer detected. The seeds are steamed once more to remove the ethyl acetate traces, though E.A. is only harmful to humans in very high quantities (400 parts per million or more). As my palates developed, I’ve grown to fall in love with what can come out of such coffees. Clarity isn’t talked much about in specialty coffee circles, as a lot of roasters like vibrant crazy blow-your-mind cups. But clarity… clarity is where it’s at. This cup from Rodin is the most clean, clear representation of a washed Guatemalan coffee (I’m being bold here) I think we’ve ever had. This just has the quintessential notes. They have two farms located in Boquete, called Mima Estate in the area of Callejon Seco and Pipim Estate in the area of Alto Lino. They produce varieties of Geisha, Typica, Catuai, and Caturra. These prize-winning coffees are grown on the Eastern slope of the Baru Volcano, surrounded by the virgin cloud forests of the Baru National Park, at a height of between 1,600 and 2,200 meters above sea level, in an area known as Callejón Seco and Alto Lino. This area consists of volcanic soil, drained on the slope of the volcanic mountain, at an altitude where winds from the Pacific and Atlantic Oceans collide creating microclimates different from the rest of the country.
